The best kept secret in kitchen cutlery is Forschner, which owns Victorinox. Victorinox is the largest manufacturer of cutlery in Europe, and their commercial grade knives are widely used in businesses in the US. Forschner makes several kinds of each knife, distinguished by the type of handle. Most come in rosewood, fibrox, or nylon. A few are walnut or beechwood. The fibrox is the commercial grade which is NSF rated. The nylon handles look very much like Henckels cutlery.
